There’s nothing quite like a big bowl of fried rice am I right? I think most people always just think of it as a side which is fair enough because it normally is but i’ve taken to make it an entire meal.

Chickpea Fried Rice (Vegan + GF)

It’s the absolute perfect lazy day meal and/or I have absolutely nothing else in the fridge meal. I tend to always have chickpeas, rice, and peas on hand so it becomes easy to just whip this up when there’s really nothing else. And it’s always really filling and hearty and makes great left overs!

It’s totally adaptable and you can add or omit things you like. I absolutely love using sushi rice but you can obviously use regular rice or brown rice or even cauliflower rice if that’s your thing.

I find myself making this over and over again and loving it more each time. It requires less than 10 ingredients and comes together in under thirty minutes and in my own biased opinion totally beats any Chinese takeout! I mean you can’t beat that can you?

Chickpea Fried Rice (Vegan + GF)

Chickpea Fried Rice (Vegan + Gluten Free)

This chickpea fried rice is a wonderful vegan twist on a take out classic. Loaded with chickpeas and veggies it’s great as a meal in itself. 

  • 1 cup sushi rice (rinsed)
  • 2 tbsp avocado oil
  • 1 15 oz can chickpeas (drained and rinsed)
  • 2 tbsp sweet fire chili sauce (optional)
  • 1 cup shredded carrots
  • 1 cup frozen peas
  • 2 green onions (diced)
  • 2 tbsp tamari
  • 1 tsp sesame oil
  1. Cook sushi rice according to package instructions.
  2. While rice is cooking heat 1 tbsp oil in a skillet over medium heat. Add chickpeas and cook until crispy. About 10-15 minutes. Add sweet fire chili sauce to chickpeas and cook together for a few minutes.
  3. Once nice and golden add in the carrots, peas, and green onions.
  4. Cook for about five minutes while rice finishes.
  5. Once rice is done push the chickpea veggie mixture to the side and add the last tbsp of oil and then pour the rice into the pan frying it up a bit.
  6. Mix everything together and add tamari and sesame oil. Serve warm!
